Tippy’s Tea of the Month: Turmeric Tea

This time of year, we’re all trying to avoid those sniffles and coughs. It’s not easy with rapidly dropping temperatures and changes in seasons. I thought it would be interesting to focus on a tea that tastes good, and has a reputation for helping the body. What do you know about turmeric? You can make tea out of the root, or purchase various forms of dried tea.

Kat has read a bit about it lately, and it got me curious. We picked a little bit up, and made a rather earthy tea with it. Here’s what we did

Tippy’s Turmeric Tea

1-inch piece of turmeric peeled and roughly chopped

½ inch piece of ginger, roughly chopped (optional)

1 tablespoon fresh lemon juice (or more if you prefer)

1 tablespoon honey

1 cup water

(makes 1 serving)

First of all, please be careful when handling the turmeric! It can stain, so be sure to use a cutting board that’s easy to clean. Smash the turmeric and ginger a little bit with the back of a spoon, just to get those juices flowing.  Boil the water and add the turmeric and ginger. Let it all bubble gently together for 5-10 minutes. Once you are happy with the flavor, turn off the heat. Add in the lemon and honey (you can always add more of both to taste). Strain into a mug and garnish with lemon slices if desired. Enjoy!

Turmeric is supposed to help the immune system and has anti-inflammatory properties. Dearies I’m teacup not a doctor, so please do not take my word as medical advice! Tippy’s Tea-Infused Cranberry Sauce

Thanksgiving is coming up fast, and Kat’s hosting this year! I’m so excited to be a part of the action. Kat has been studying her cookbooks, picking out each dish she wants to make for her friends. I’m going to be creating my favorite Thanksgiving tea cocktails, and I decided I wanted to do a tea-infused dish.

 Dearies, it took me awhile to come up with just the right dish. Did I want to do a vegetable? perhaps a starch side? After mulling it over a bit and discussing with my kitchen friends, I decided on a dish that’s iconic, and stands out on the plate. Something everyone has at Thanksgiving. Cranberry sauce! Kat likes to make her cranberry sauce with citrus, so that got me thinking. What tea would work in cranberry sauce? There are many options, but I wanted something to compliment the citrus. So, of course I chose Earl Grey! That lemony-flavored bergamot is the perfect way to enhance Kat’s cranberry sauce!

Tippy’s Earl Grey Cranberry Sauce

 1 12-ounce bag fresh cranberries (can also use frozen)

3/4 cup sugar

1/2 cup orange juice

1/2 cup boiling water

2 earl grey tea bags

Zest of 1 orange

Boil the 1/2 cup water in a medium-sized pot and pop in the teabags. Steep for 5 minutes, remove teabags and add in the cranberries, sugar, and orange juice. Cook over high heat until the cranberries start to pop open and the sugar dissolves, about 6-10 minutes. Stir and add in the orange zest. Cook for another few minutes and remove from heat. Allow to cool just enough so you can pour it into a bowl. Cover and leave in fridge for about 2 hours, until it’s fully cool. You can serve it cold or at room temperature.

For the teabags we like to use Wegman’s Earl Grey. This is a perfectly balanced Earl Grey tea with just the right amount of citrusy bergamot flavor to compliment the earthy black tea. It is bright and refreshing. Kat keeps it around at all times. Perfect for an afternoon cup with a buttery shortbread biscuit, too! The Earl Grey brings a nice extra note of citrus to our homemade cranberry sauce.

Matcha Donuts!

Dearies, as you know matcha is everywhere these days. You can enjoy it straight up, as a latte, or in a myriad of foods. Kat has brought home everything from matcha cream puffs, to matcha green-tea noodles. We’ve been putting it in our bath products, and you may remember I created a matcha face mask that’s perfect for an at-home spa night. It seems that everywhere you turn you’ll find a new use for matcha!

 Kat recently brought home a surprising matcha-product. A matcha donut! This donut in particular was quite special. A chocolate cake donut with a luscious matcha glaze. What a way to enjoy our favorite tea!

 It seems like many donut shops are jumping on the matcha bandwagon. Kat said some of her friends around the country have found matcha donuts too! This is definitely a trend that I can happily support. More matcha for everyone. Our local shop keeps this donut feeling special. They only make them on Saturdays! This causes the lines to be a bit long on Saturday mornings, but well worth the wait. If you have a donut shop or two in your town, ask if they make any with matcha! If you can find one, you’ll be glad you did.

I was thinking that it would be such fun to matcha donuts from scratch, but Kat said she doesn’t have time for something so labor intensive. But what about a quick matcha glaze to add to your store bought donuts? Make a matcha glaze with three simple ingredients: powdered sugar, matcha, and water! A quick search can come up with lots of recipes, but I do like this one best. You can put it on your donuts, cakes, well just about anything!!

So, what tea to pair with your matcha donut? I’d suggest a refreshing green tea. In fact, we’ve been pairing out donuts with Private Selection Citrus Green. I’ve paired this tea with sweets before as it’s a lovely combination of delicately vegetal green tea and tangy orange. The green tea compliments the matcha, and the orange cuts through the heavy donut and even accentuates the chocolate notes in the confection. Kat keeps this tea on hand to drink all year round. It’s thirst quenching in the summer, and a relaxing warm cup for early afternoon sips in the chillier weather. This tea is definitely one of our staples!

Tippy’s Apple Cinnamon Tea Bread

I’m all about autumn flavors these days, and I just came up with this tasty and easy quick bread to pair with your favorite teas. It’s perfect as an afternoon treat or a delicious way to end a dinner party.

This is made in a loaf pan to make it super simple. There is a streusel topping of cinnamon and brown sugar that also makes a surprise appearance inside the bread!

This tea bread has spices that remind me of apple picking and pumpkin pie. It’s the perfect autumn snack!

Tippy’s Apple Cinnamon Teatime Quick bread

makes 1 loaf

  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 tsp. nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp ground cloves
  • 1 large apple, peeled and finely chopped (any will do, but granny smith are best)

Preheat your oven to 350. Grease a 9×5 inch loaf pan and set aside. In a small bowl mix the brown sugar and cinnamon together. This will be the topping and filling, so set it aside for later. In a second bowl, whisk together the flour, baking powder, nutmeg, and ground ginger.

In a mixer, cream the white sugar and butter until smooth. Add the eggs and vanilla and mix until combined. Add about a third of the flour mixture, then a bit of the milk, and alternate until everything is just combined and smooth. Try not to over mix. If it seems too sticky, add a little bit more milk.

Add half of the batter to the loaf pan. Then cover with half the apples and half of the cinnamon/brown sugar mixture. Then pour in the rest of the batter and top with the remaining apples and then the cinnamon sugar mixture.

Bake for 50-60 minutes or until toothpick inserted in the middle of the loaf comes out clean. Cool in pan before transferring to a cooling rack.

This tea bread is perfect for afternoon tea, dessert, or even breakfast. It compliments many different types of tea and has all of the wonderful warming fall spices. I hope you enjoy!

 

Tippy’s Autumn Mulled Tea Recipe

There may still be a warm breeze in the air, but very soon things are going to start getting crisp and chilly. The leaves will start to turn, everything will start to smell wonderfully earthy, and Kat will start cooking warm, comforting dishes. It’s my job to get the beverages ready for the cooler weather, and I have the perfect recipe to share with you today. Something comforting, and spicy, like a warm fuzzy sweater in a mug. Have you ever tried mulled cider? It’s warm apple cider with delicious warming spices heated through it. I was thinking about how Char used to make the most wonderful mulled cider, and realized it’s easy to add these flavors to tea. Very similar to masala chai. Who doesn’t love a good chai?

I started with chai and traditional mulled wine in mind, and made a few tweaks. Here’s the delicious recipe I came up with:

Tippy’s Mulled Tea

3 cups hot water

4 slices of orange peel

4 whole cloves

3 cardamom pods

2 1-inch pieces of cinnamon

1 tsp sliced fresh ginger

3 bags orange spice tea

Use a peeler to carefully create your orange peel slices. Try to just get the orange part, and not the white bit, as that is a bit bitter Bring the water to a boil, and add the orange peel and spices.

Lower to a simmer, and let it cheerfully bubble together for 10 minutes. Dearies it’s going to smell amazing in your kitchen! Enjoy that aroma, turn off the heat and add the teabags. Let everything sit for another 5 minutes. Taste, and you can let it sit even longer if you’d like. Strain the mixture. We like to serve the tea in mugs and let our guests add honey to their liking. Or you could add a few tablespoons of honey after you strain the spices.

I decided to try using Private Selection Orange Spice tea in this mulled brew. One of Kat’s favorite teas, it is a lovely black tea blend that is infused with orange, cinnamon, and cloves. She brings it out as soon as the first few leaves start to lazily float to the ground. A perfect autumn and winter tea, It’s comforting and will enhance all of the wonderful mulling spices.

This is the perfect drink to whip up when you’re feeling chilled and in need of some comfort. It’s also well suited for a gathering- your friends will smell the warm spicy aroma as soon as they enter the front door. Happy mulling!

Tippy’s Green Tea Granita

If you’re looking for a new way to refresh yourself in the late summer weather, look no further than an icy cool granita! This cooling treat is similar to a slushy, but with more crunchy texture. It’s super easy to make, and will instantly cool you down. It’s also very easy to customize using your favorite flavors. I’ve been experimenting, and decided that green tea, ginger, and lemon is my favorite combination so far. The only equipment you need is a sheet pan or shallow glass pan, and room to stash it in your freezer.

1 tablespoon of minced fresh ginger

3 cups water

3 green tea bags

Simple syrup

1 lemon zested and juiced

First, make a ginger-tea infusion. Bring the 3 cups of water to a boil, add the ginger. Boil the ginger for about 3 minutes and turn off the heat and let sit for 30 seconds. After this step, add in the teabags (this is because you should never use boiling water for green tea, it’s too hot and can make the brew bitter). Steep the ginger and tea together for 10-15 minutes.

Add in half the lemon juice and three tablespoons of simple syrup. Give it a taste, and add more of both as desired. You can make it as sweet or tangy as you like!

Once the flavor is to your liking, pour the mixture into your pan of choice. We like to use a small shallow glass pan, since it’s all we can fit in our freezer. It works just perfectly! Freeze the mixture for about 30 minutes or until it’s just starting to become solid. Then, fluff it with a fork.

For the next 2 hours, check on the mixture every 30 minutes (it may need much more than that but keep checking since every freezer is a little bit different, fluffing and stirring to create broken ice crystals. It should be slushy with lots of crunchy ice crystals. That’s when it is perfect to serve and enjoy. If your mixture gets too hard, you can leave it in the fridge for a while, or even blitz it in the food processor for a few seconds. This recipe needs a little attention, but it’s super simple, and in no time you’ll have a perfect summer dessert. Kat recently made this recipe for friends with great success. They loved the crunchy green tea flavor! The zing of ginger and tart lemon makes this light and refreshing.

For this granita Kat used Harris green tea. It has a mild vegetal green tea flavor and is perfect to add to any recipe. Kat loves this tea because the green tea flavor is balanced and not overpowering. It’s not too vegetal and is super smooth. For a different spin on this dessert, Kat is actually thinking of making the granita with an herbal tea for her niece Camille. She’s visiting next week and it’ll be the perfect refreshing treat! One bite of this crunchy, frozen treat will instantly cool you down and you’ll imagine you’re in the crisp autumn weather. Dearies I hope you enjoy my favorite new icy treat!

Tippy’s Minty Matcha & Lime Popsicles

The weather is still quite warm out there, and Kat and her friends are coming up with new ways to stay cool. Their latest idea is homemade popsicles. I love this idea! Of course, I had to create my own tea-infused twist. After much consideration, I decided that matcha would be the perfect tea to add to an icy popsicle. The sweet vegetal green tea flavor holds up to most ingredients, even those that are tangy and strong. After a little bit of experimentation, I came up with my new recipe! I’m so excited to share it with you. It combines our favorite matcha flavor with tangy lime and cooling mint.

Tippy’s Minty Matcha & Lime Popsicles

2 cups hot water

2 tsp matcha

1 lime- juiced and zested

Handful of fresh mint leaves

Simple syrup

Prepare your matcha by whisking together the tea and hot water. Allow to cool to room temperature.

Mix in your lime juice and 2 tsp of lime zest. Add 3 tbsp of simple syrup and taste. If it’s not sweet enough keep adding by the tablespoon until you are satisfied. Roughly chop mint leaves and drop a few into the ice pop molds.

Pour in the matcha mixture, and pop on your tops. Pop in the freezer until the pops are fully formed. If you are using wooden sticks, freeze the mixture for about 60 minutes, pop in sticks, and return to the freezer. That way the sticks will stand straight up!

These icy cold treats have a strong matcha flavor with the refreshing blend of lime and mint. Dearies I hope you love my icy matcha popsicles! They’re sure to be a hit at your next outdoor gathering. Or keep them all for yourself! Kat plans on making these as long as the weather stays warm to enjoy a cooling moment any time of day.

How To: Decorate for a Summer Tea Party

The sweet smell of summer flowers, teacups gently clinking in their saucers and delicious light bites. It’s time for summertime tea parties! Dearies, Kat likes to change up her tea parties based on the season. In the winter and fall, she likes cozy get-togethers. But once summertime hits, she’s all about outdoor tea parties! We like to go a bit crazy with the florals- fresh flowers, floral china cups and teapots, even floral napkins. We like to use mismatched patterns, to give everything a lush, garden vibe. We also like to put edible flowers on our cakes and cupcakes. Gorgeous! If you have lots of teacups like Kat does, stack them and cluster a few stacks together with flowers in the very top. Easy centerpiece!

You could also go for a beachy theme, decorating the table with coral and seashells! Wouldn’t it be fun to do a late-afternoon tea party with a table strewn with lovely shells and gently flickering candles that light up with table as the sun slowly sets? I can practically hear the ocean waves as I think about it! Kat loves being on the beach, so I’m going to suggest this for her next tea party.

Another fun idea is to also put picnic blankets down if you have a grassy area. This way your friends can choose to lounge in the cool grass while they sip their tea. Make sure you have a large space that’s out of the sun, or make sure to have large umbrellas to create shady spots.

If you’re serving iced teas, don’t forget to include flower and herb ice cubes! Check out my previous post on how to do this. Thy will be a surefire hit. A summery tea Kat likes to serve her guests is HEB Serenity Spearmint Lavender tea. In the summertime she loves serving this tea iced. The frosty mint flavor is perfect for the hottest summer days. The soothing lavender is perfect for a relaxing get-together or even a quiet afternoon on your own. This tea is caffeine free, so it’s perfect for the whole family. She loves this tea as-is but for her tea soirees, she’ll add fresh mint and lavender leaves to her brew. It just looks so festive that way! Kat discovered this tea while visiting relatives in Texas. She was looking for a refreshing tea to combat the strong Texas sun and popped into the local HEB store. When she noticed the Serenity tea, she was curious about the combination of lavender and spearmint. She wasn’t sure if they’d work together, but once she tried it, she was amazed at how well the two herbs work together. She likes this combination so much that she grows fresh lavender and mint so she can make her own version when she’s in-between boxes.

For the savories, we like to do easy cucumber, cream cheese and dill tea sandwiches, fruit tarts or little mini pound cakes topped with fruit. Also mini cupcakes with edible flowers. Just go for things that are light, refreshing, and filled with seasonal ingredients.

Tippy’s BBQ Steak Rub

Dearies, you know I love backyard BBQs. It’s basically all I ever talk about in the summer! I’m constantly thinking of tea-infused recipes for Kat to use, and today I’m happy to share my steak-rub recipe! This recipe is simple to make, and grills up a savory, smoky, tea-flavored steak. Is your stomach grumbling yet?

My favorite tea for a steak rub is lapsang souchong. The hit of smoke works well with the charred meat. You can use another black tea of your choice if you prefer. For an extra hint of smoke, I like to include chipotle chili powder.

I like to serve sautéed mushrooms alongside the steak, or even piled on top. The smokey, savory flavors are enhance with the mushrooms.

This recipe is perfect for steak but you can also use it for grilled tofu  ‘steak’ or grilled seitan as well.

The tea leaves can be whole, or small pieces from a tea bag. Either will work, but the larger leaves will give you a crunchier texture.

Tippy’s BBQ Tea Rub

  • 1 tsp Kosher salt
  • ½ cup black tea leaves (we like to use Lapsang Souchong)
  • ¼ tsp ground cloves
  • 1 tsp chipotle chili flakes or powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 lb steak of choice

Combine all rub ingredients in a medium sized bowl. Pat it liberally all over your steak and let it sit for about an hour so the flavors will come together. Grill the way you like it, and enjoy!

This is an easy recipe to play around with- you can swap out the type of tea and play around with the spices. You can also serve it with a BBQ sauce if you’d like to add even more flavor. I hope you enjoy, Dearies!

Cooking With Tea: Tea Poached Fruit

Kat loves to serve fruity desserts. They can be light yet incredibly flavorful. Always the helpful teacup, I’ve been trying to think of ways to incorporate tea with fruit. I started thinking about French preparations, as we had the most memorable desserts when we travelled to Paris a few years ago. The food is just good everywhere you go in Paris! There was one little bistro that had an amazing poached pear dish that Kat often tries to recreate at home. I thought hey, why not poach fruit with tea? So I got experimenting, and came up with a recipe I’m excited to share. You can use whatever type of fruit you like that will keep a bit of shape while you cook it. I’d suggest pears, peaches, cherries or plums. Whatever you decide on, just make sure you use a fruit that has a bit of firmness but should still be ripe. You don’t want your dessert to turn into mush!

For this recipe we chose pears, and True Goodness Organic Black Chai Tea. Kat keeps this tea in her pantry at all times, as it’s a quick and easy way to prepare a tasty chai. It is unsweetened, and she often adds a little honey or sugar and a dash of milk to the brew. This tea brings me back to traveling through India with Char. The aroma of cardamom, clove, and cinnamon is so vibrant! I can still taste the milky, spicy chai from endless street vendors throughout the cities we visited. I hope to take Kat there some day! Anyway dearies, enough reminiscing, here’s my recipe:

Tippy’s Tea-Poached Fruit

Makes 4 servings

2 cups water

2 tea bags (For this recipe we used True Goodness Organic Black Chai Tea)

1/4 cup of sugar

2 large firm but ripe pears, peaches  (we like to use bosc), peeled, cored, and halved.

In a medium sized saucepan bring the 2 cups of water to a boil.  Turn off the heat and add the teabags. Let the tea steep for 10-15 minutes. You want it good and strong! Once steeping is done, remove teabags. Turn the heat back on to medium, and add the sugar once the liquid is warmed up again. Stir until it’s dissolved. Add the halves of fruit. Cover and simmer until the fruit is nice and tender, you can pierce with a knife to check, about 25 minutes. Once the fruit is tender, remove it carefully from the mixture, into a bowl. Continue to then boil the sweet, spiced syrup until it has reduced down to about ¾ cup, which should take 10-15 minutes. When reduced, pour the syrup over the fruit. We like to serve ours at room temperature, but you can also refrigerate for a few hours and then serve.

Since it’s summer, we like to place the fruit atop vanilla ice cream and drizzle the extra syrup over the top. However you decide to serve it, it’s delicious and easy to prepare. You’ll feel like you’re in the French countryside with your tea poached fruit!
