Adding Ginger To Your Tea

This time of year Kat likes warming flavors to soothe and comfort. I’ve written about warming teas before, but I thought I should focus on one of her most favorite flavors: ginger. Dearies, do you enjoy ginger in your tea? If you’ve never had ginger tea before, it’s a must! It’s a zingy, versatile flavor that goes well with both green and black tea. It’s also lovely with rooibos and tulsi!

You can really take just about any tea and add some ginger flavor either with fresh or dried ginger. Kat loves fresh ginger and always has some in the kitchen. If you have some time, her favorite thing to do is peel and slice a 1-inch piece, and boil it in a saucepan with a cup of water for 5-10 minutes. You can leave the ginger steeping in the water as long as you like, especially if you like it super spicy. She then will add in a teaspoon or two of loose tea, steep, and then strain. Or she’ll strain the ginger water into a mug with a patiently waiting teabag. Add in a dash of honey and/or lemon, and you’re good to go! A deliciously warming cup of tea.

There are times when we run out of fresh ginger, or just need our ginger tea fix as quickly as possible. On these occasions Kat reaches for HyVee ginger tea. Kat just loves this tea and always has a box in the cupboard. It’s quite convenient and steeps up the most delicious, spicy cup of tea. It is herbal so it has no added tea, just pure ginger goodness! Kat drinks this tea in the evening, uses it as a base for masala chai, and even adds it to baked goods. It gives a ginger zip to anything you add it to.

As I mentioned, ginger is an important component of masala chai. It’s one of our favorite beverages to make this time of year! Check out my previous post for recipes and ideas. Stay tuned, I’ve also got a masala chai hot chocolate recipe coming soon!

So Dearies, while the leaves start to swirl and the temps drop, reach for some ginger tea! It’s just lovely this time of year.

Creative Ways To Serve Tea This Halloween

We are inching closer to Kat’s most favorite holiday. Halloween! She just loves the colors, costumes, and festive fall flavors that are associated with the day. Kat’s having her niece Camille and a few of her little friends over for a Halloween party. This year I thought it would be fun to focus on a few teas and fun vessels to serve them in.

First off, the teas. Here are a few of my favorites for Halloween:

Rooibos- Rooibos has a earthy but slightly sweet flavor with a hint of vanilla. It blends well with other flavors and is caffeine free. You can find it with all sorts of flavorful ingredients blended in, or blend it on your own! Add vanilla, fruit, or berries for a festive drink. Camille loves rooibos and always asks for it when she comes to visit.

HEB Cranberry Blood Orange tea– what better tea to serve than one that has ‘blood’ in the name? Hee hee! This one has caffeine so it should be for the adults. It’s a tea Kat has been drinking for years, especially in the cooler weather. The flavor is sweet with a hint of tart freshness. It’s quite delicious and pairs well with desserts and savories with a hint of sweetness. The citrus flavor is a nice change from all the earthy fall flavors often served during this time of year. And really, isn’t it fun to say you’re drinking a bloody tea for Halloween?

Chai hot chocolate- my last post (will link to recipe here) was a delicious recipe for chai hot chocolate. Who wouldn’t love these flavors all mixed together? You can omit the black pepper and lighten up on the ginger if you don’t want it too spicy for the wee ones. You can also omit the tea altogether, to keep it lower in caffeine. This is also a perfect drink to serve after the kids come inside from trick-or-treating. It’ll warm them right up!

Now, let’s discuss what to serve your drinks in. It’s time to get silly and fun!

Googly Eyes- you can stick googley eyes on to just about any cup or mug and you’ll instantly have a Halloween-ready drink! The kids and adults will both get a giggle.

Gummy worms and eyes- Look for gummy candy such as worms and eyeballs. Drop a few in your drink (just make sure it’s not a hot drink) and fool your guests! No one will be expecting to see an eyeball floating in their cup!

Beakers- You can find different beaker shapes with a quick internet search. They’ll look right out of Dr. Frankenstein’s laboratory. Put colorful drinks inside (ice that HEB tea I just mentioned!) and you’ll have a nice compliment to your halloween decor.

Don’t forget creepy accessories like skeleton stir sticks, plastic spiders, and bats. There are all sorts of accessories you can add to your cups and glasses, just like my collection of bats and skeleton sticks! Do you like my hat? I think I look perfectly witchy!

Tippy’s Autumn Mulled Tea Recipe

There may still be a warm breeze in the air, but very soon things are going to start getting crisp and chilly. The leaves will start to turn, everything will start to smell wonderfully earthy, and Kat will start cooking warm, comforting dishes. It’s my job to get the beverages ready for the cooler weather, and I have the perfect recipe to share with you today. Something comforting, and spicy, like a warm fuzzy sweater in a mug. Have you ever tried mulled cider? It’s warm apple cider with delicious warming spices heated through it. I was thinking about how Char used to make the most wonderful mulled cider, and realized it’s easy to add these flavors to tea. Very similar to masala chai. Who doesn’t love a good chai?

I started with chai and traditional mulled wine in mind, and made a few tweaks. Here’s the delicious recipe I came up with:

Tippy’s Mulled Tea

3 cups hot water

4 slices of orange peel

4 whole cloves

3 cardamom pods

2 1-inch pieces of cinnamon

1 tsp sliced fresh ginger

3 bags orange spice tea

Use a peeler to carefully create your orange peel slices. Try to just get the orange part, and not the white bit, as that is a bit bitter Bring the water to a boil, and add the orange peel and spices.

Lower to a simmer, and let it cheerfully bubble together for 10 minutes. Dearies it’s going to smell amazing in your kitchen! Enjoy that aroma, turn off the heat and add the teabags. Let everything sit for another 5 minutes. Taste, and you can let it sit even longer if you’d like. Strain the mixture. We like to serve the tea in mugs and let our guests add honey to their liking. Or you could add a few tablespoons of honey after you strain the spices.

I decided to try using Private Selection Orange Spice tea in this mulled brew. One of Kat’s favorite teas, it is a lovely black tea blend that is infused with orange, cinnamon, and cloves. She brings it out as soon as the first few leaves start to lazily float to the ground. A perfect autumn and winter tea, It’s comforting and will enhance all of the wonderful mulling spices.

This is the perfect drink to whip up when you’re feeling chilled and in need of some comfort. It’s also well suited for a gathering- your friends will smell the warm spicy aroma as soon as they enter the front door. Happy mulling!

Behind The Leaf: Chamomile

Dearies, we’ve learned quite a bit about teas from the camellia sinensis plant. Those are all the lovely pure teas we drink such as white, oolong, green, and black. But we shouldn’t ignore all of those tasty herbal teas out there! They deserve to be highlighted too. This week I decided we should focus on Chamomile, one of Kat’s most favorite herbal teas.

Many people love chamomile. It’s floral, soothing, and has a lovely honey-like sweetness. This aromatic herb is easy to find in just about any grocery store, and is easy to brew. It’s a popular tea since it has no caffeine and has a pleasing light flavor. Really, who doesn’t love a good cup of chamomile?

You’ve probably seen the lovely daisy-like plant before, at least in photographs on the tea box. There are many different species of chamomile but the two most common types are the German and Roman varieties and it grows in various other parts of the world.

Chamomile is a very nostalgic tea for Kat. Whenever she’d visit dear Char, there was always a cup of chamomile waiting for her at the table. Char even let her add in a huge spoonful of honey. I can still remember how Kat would give the honey a quick stir, and then pop the spoon in her mouth to enjoy the sweet remnants. These days Kat has been enjoying a hot cup of chamomile in the evenings and she often has an icy cool glass on warm summer afternoons. Lately she’s been enamored with her chamomile tea from Newman’s Own Organics. She picked it up at her local Stop & Shop while looking at all of the herbal teas in the aisle. It is so soothing, and simply contains Egyptian organic chamomile. It is floral, sweet, with a hint of earthiness. One sip and she is transported to Char’s table, chatting and remembering all the wonderful times they had together.

As far as preparing chamomile, you can’t really brew it incorrectly. You can use boiling water and brew for as long as you like! It’s very difficult to over-steep. You can ice it down or add to cold water for a cold brew. It’ll work any way you prepare it.

Tippy’s Green Tea Granita

If you’re looking for a new way to refresh yourself in the late summer weather, look no further than an icy cool granita! This cooling treat is similar to a slushy, but with more crunchy texture. It’s super easy to make, and will instantly cool you down. It’s also very easy to customize using your favorite flavors. I’ve been experimenting, and decided that green tea, ginger, and lemon is my favorite combination so far. The only equipment you need is a sheet pan or shallow glass pan, and room to stash it in your freezer.

1 tablespoon of minced fresh ginger

3 cups water

3 green tea bags

Simple syrup

1 lemon zested and juiced

First, make a ginger-tea infusion. Bring the 3 cups of water to a boil, add the ginger. Boil the ginger for about 3 minutes and turn off the heat and let sit for 30 seconds. After this step, add in the teabags (this is because you should never use boiling water for green tea, it’s too hot and can make the brew bitter). Steep the ginger and tea together for 10-15 minutes.

Add in half the lemon juice and three tablespoons of simple syrup. Give it a taste, and add more of both as desired. You can make it as sweet or tangy as you like!

Once the flavor is to your liking, pour the mixture into your pan of choice. We like to use a small shallow glass pan, since it’s all we can fit in our freezer. It works just perfectly! Freeze the mixture for about 30 minutes or until it’s just starting to become solid. Then, fluff it with a fork.

For the next 2 hours, check on the mixture every 30 minutes (it may need much more than that but keep checking since every freezer is a little bit different, fluffing and stirring to create broken ice crystals. It should be slushy with lots of crunchy ice crystals. That’s when it is perfect to serve and enjoy. If your mixture gets too hard, you can leave it in the fridge for a while, or even blitz it in the food processor for a few seconds. This recipe needs a little attention, but it’s super simple, and in no time you’ll have a perfect summer dessert. Kat recently made this recipe for friends with great success. They loved the crunchy green tea flavor! The zing of ginger and tart lemon makes this light and refreshing.

For this granita Kat used Harris green tea. It has a mild vegetal green tea flavor and is perfect to add to any recipe. Kat loves this tea because the green tea flavor is balanced and not overpowering. It’s not too vegetal and is super smooth. For a different spin on this dessert, Kat is actually thinking of making the granita with an herbal tea for her niece Camille. She’s visiting next week and it’ll be the perfect refreshing treat! One bite of this crunchy, frozen treat will instantly cool you down and you’ll imagine you’re in the crisp autumn weather. Dearies I hope you enjoy my favorite new icy treat!

Back To School Tea Party Ideas

It time to put away bathing suits and sand toys and start getting ready to go back to school! Like most children Kat’s niece Camille is reluctant about it, so Kat thought she’d find a way to lift her spirits and get her ready. I of course had the most brilliant idea. A back to school tea party! Imagine a party filled with sweets and treats to start getting the young ones back in the school spirit. With a little planning we can lift their spirits and get them excited about going to class.

For starters, let’s talk about décor. I’ve decide there needs to be a crafty-school theme for the party. A centerpiece incorporating a nice big globe, pencils with flower eraser toppers (and everyone gets to take one home), and by each plate a mini chalkboard personalized with each guest’s name. Kat suggested also placing a little notebook and pen next to each plate so the guests can take tasting notes. This will get them ready for creative writing and critical thinking!

I think apples should be the food theme, don’t you? A nice homage to the season, and all of those hard working teachers. We’re thinking a fennel apple salad to start, cheddar and apple finger sandwiches, Candy apples, and apple tarts to bring a festive feel to the party. We may also have a few small bowls of shiny apples on the table for décor.

To accompany the delicious bites, we’re going to serve Hy-vee Honey Orange Chamomile tea. This herbal tea blend is caffeine free and perfect for everyone at the party. The honey and citrus flavors will work perfectly with the apple flavored nibbles. Kat knows this tea is a favorite of Camille’s, and she can’t wait to surprise her with it. She’s not sure if she’ll serve it hot or iced yet, it will depend on the weather forecast. This tea is very soothing hot. The sweet honey and tangy citrus make for a smooth and nuanced cup. The honey and chamomile combine to make a sweet and delicate flavor. When iced, the orange proves to be quite refreshing and the floral chamomile rounds everything out quite nicely. You can’t go wrong with this tea!

 Since we want this to be a party that combines school and fun, there needs to be a game or two! We’re going to create a ‘Pin The Spout On The Teapot’ game by easily cutting out a large festive cardboard teapot and making spouts to be pinned on. I think we’ll also do a ‘guess how much’ game, where we’ll fill a large glass teapot with jellybeans and everyone needs to have a guess at how many are inside. A great way to revive those math skills after a fun summer!

DIY: Cucumber Green Tea Body Spray

Dearies this sweaty weather seems endless, doesn’t it? Kat has taken her afternoons on the shady porch, with a glass of iced tea in hand, and a good book. It’s been so hot that even a shady spot isn’t the oasis it once was. I decided it was time to do something about it. I noticed that my kitchen friends that live near the sink always seem to be the most comfortable in the heat. I realized it’s because they’re always getting sprayed by the faucet. Then it dawned on me- a body spray! That’s what Kat needs. So off I went, trying to find just the right combination of ingredients.

Kat loves cucumber in the summer, she says it’s quite refreshing. So I decided to put that idea in the spray. I think green tea pairs well with the cucumber. Both flavors are quite aromatic, and refreshing. With just a little bit of prep, you can have a refreshing body spray to beat that summer heat.

Tippy’s refreshing green tea + cucumber body spray

2 cups water

2 teabags of green tea of choice

Half a large cucumber

2 tsp witch hazel

Spray bottle

Steep the teabags in just-boiled water for 20 minutes or more. Allow to fully cool in the fridge.

Peel the cucumber and cut into large chunks. Puree in a food processor

Strain the mixture through a fine sieve, coffee filter, or cheesecloth until you get as much liquid out as possible. You can chuck the solids, or use it in a delicious cucumber yogurt sauce!

Add the cucumber to the tea mixture and mix in the witch hazel. Fill a spray bottle and keep it in the fridge at all times. When you’re feeling hot, just give yourself a spritz!

Camping With Tea

Here’s the scene: Waking up in the lush green forest listening to birdsong and the smoky comforting smell of a campfire. Summertime is Kat’s favorite time of year to go camping. She loves being out in the forest so close to nature. Hiking, fishing, cooking over a fire, she just loves it all! She even likes sleeping in a tent. There is however one comfort she can’t live without: tea!

Over the years Kat has perfected a way to have tea while camping. It involves a little bit of gear, but can also be done with less. She does have a bit of tea camping gear, she just love collecting tea ware no matter what the occasion! Those enamelware cups are just so cute, Kat has a large vintage collection!

So there are only a few things you really need to enjoy tea while camping: First a heat source (campfire or camping stove), and vessel to boil water (we just use a cooking pot). Then you pick and choose: thermos, enamelware teapot, and enamelware teacups, empty teabags to fill, or just regular teabags. If you are trying to pack light, all you really need is the boiled water and a cup to put your tea in. If you need to pack even lighter, you can put the tea directly in your cup and sip it grandpa style (sipping with the leaves directly in the water). Or you could put the tea in a fillable teabag, steep and remove. Or of course, you can bring along your favorite teabags, and steep those. That’s what Kat often does.

A tea she likes to bring camping is Private Selection Orange Spice black tea. This tea has orange cinnamon and clove flavors that hold up well to that smoky camp fire. Perfect with a hearty breakfast, lunch, or dinner by the campfire. It would also pair nicely with sweet, chocolatey s’mores, which are a must if you are going camping! Kat drinks this tea all year round. It’s soothing in the chilly months and quite refreshing when it’s warmer outside. She even serves it iced! I guess you could say it’s one of her staples. She always has it in the cupboard.

DIY: Tub Teas using Summer Herbs

One of Kat’s favorite ways to end a busy summer day of beachgoing and pool hopping is to take a relaxing bath. Isn’t it lovely to soak sun-kissed skin and weary muscles after a long day of outdoor activities? Kat often uses our green tea soak, and I’ve recently come up with even more tea-themed bath ideas. Dearies, it’s the perfect time of year to create herbal tea bath soaks. You can even use seasonal herbs you grow in your own garden!

The herb choices can vary based on what you have on hand, or what’s lush in your garden. We like to choose lavender, chamomile, peppermint, or lemon verbena. But you can add in whatever aromatic herb you’d like.

You can also add relaxing elements such as Epsom salts, and rose petals for a soothing bath that will transport you to a quiet oasis.

To make your own teabags, you can use my tutorial here. Or, you can simply fill up a tea sac and staple the top. You’ll want to make your teabags larger than a regular one, since the tub is much bigger than a cup of tea! Or if you’re using small teabags, just use a few at a time. If you’re making large teabags, you should add in about ¼ cup of your herbs. You can use one, or a blend of a few different herbs. Mix and match and see what you like best!

If you are pressed for time or don’t have a garden, you can use any store-bought herbal teabag. Kat has actually been using HEB Catch Your Z’s right in the tub. Kat has tried many different types of bedtime teas, as she enjoys having a warm cup before bed. She finds it helps her wind-down after a hectic day and is a lovely way to find a few minutes just for herself. Her mother actually sent her a box of this tea recently, and she’s  been preparing a cup almost every night. The soothing flavors of peppermint and chamomile instantly start to calm her down. The other night she decided to add 3 of these teabags to her warm bath, and she just loved the experience. The steamy water diffused the herbal aromas all around the bathroom. She felt like she was in a spa, having one of those fancy bath soaks.

Give these tub teas a try, and bring the spa right to your bathroom! Don’t forget to bring a cup of tea with you, too! Hot or iced, you can sip as you relax. Enjoy!

Cooking With Tea: Tea Poached Fruit

Kat loves to serve fruity desserts. They can be light yet incredibly flavorful. Always the helpful teacup, I’ve been trying to think of ways to incorporate tea with fruit. I started thinking about French preparations, as we had the most memorable desserts when we travelled to Paris a few years ago. The food is just good everywhere you go in Paris! There was one little bistro that had an amazing poached pear dish that Kat often tries to recreate at home. I thought hey, why not poach fruit with tea? So I got experimenting, and came up with a recipe I’m excited to share. You can use whatever type of fruit you like that will keep a bit of shape while you cook it. I’d suggest pears, peaches, cherries or plums. Whatever you decide on, just make sure you use a fruit that has a bit of firmness but should still be ripe. You don’t want your dessert to turn into mush!

For this recipe we chose pears, and True Goodness Organic Black Chai Tea. Kat keeps this tea in her pantry at all times, as it’s a quick and easy way to prepare a tasty chai. It is unsweetened, and she often adds a little honey or sugar and a dash of milk to the brew. This tea brings me back to traveling through India with Char. The aroma of cardamom, clove, and cinnamon is so vibrant! I can still taste the milky, spicy chai from endless street vendors throughout the cities we visited. I hope to take Kat there some day! Anyway dearies, enough reminiscing, here’s my recipe:

Tippy’s Tea-Poached Fruit

Makes 4 servings

2 cups water

2 tea bags (For this recipe we used True Goodness Organic Black Chai Tea)

1/4 cup of sugar

2 large firm but ripe pears, peaches  (we like to use bosc), peeled, cored, and halved.

In a medium sized saucepan bring the 2 cups of water to a boil.  Turn off the heat and add the teabags. Let the tea steep for 10-15 minutes. You want it good and strong! Once steeping is done, remove teabags. Turn the heat back on to medium, and add the sugar once the liquid is warmed up again. Stir until it’s dissolved. Add the halves of fruit. Cover and simmer until the fruit is nice and tender, you can pierce with a knife to check, about 25 minutes. Once the fruit is tender, remove it carefully from the mixture, into a bowl. Continue to then boil the sweet, spiced syrup until it has reduced down to about ¾ cup, which should take 10-15 minutes. When reduced, pour the syrup over the fruit. We like to serve ours at room temperature, but you can also refrigerate for a few hours and then serve.

Since it’s summer, we like to place the fruit atop vanilla ice cream and drizzle the extra syrup over the top. However you decide to serve it, it’s delicious and easy to prepare. You’ll feel like you’re in the French countryside with your tea poached fruit!
